  • 1 pound raw shrimp (peeled, deveined, and sliced in half lengthwise)
  • 1 cup lime juice (about 34 large limes)
  • 1 small red onion (thinly sliced)
  • 3 cloves garlic (chopped)
  • 3/4 cup fresh cilantro (chopped)
  • 1 large jalapeño pepper (chopped)
  • 1 medium cucumber (peeled and sliced into crescents)
  • Salt to taste
  • Spicy chili flakes for garnish

Instructions

  1. In a mixing bowl, combine shrimp with lime juice and salt. Let marinate for about 10 minutes until shrimp turn opaque.
  2. Drain excess liquid but reserve half a cup of lime juice.
  3. In another bowl, combine reserved lime juice with chopped garlic, cilantro, jalapeño, and salt. Mix well.
  4. Gently fold marinated shrimp into the mixture along with red onion and cucumber slices.
  5. Transfer to a serving platter, garnish with chili flakes, and serve immediately with tortilla chips or as desired.
