  • 4 boneless, skinless chicken breasts
  • 1 medium Granny Smith apple
  • 4 oz light Brie cheese
  • 1 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 tbsp creamy Dijon mustard
  • 1 tsp whole grain Dijon mustard
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp dried thyme

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Create pockets in the chicken breasts by slicing horizontally without cutting all the way through.
  3. Stuff each pocket with apple slices and Brie cheese, then fold the chicken back.
  4. Season both sides of the stuffed chicken with salt, pepper, and thyme.
  5. Heat olive oil in a large skillet over medium-high heat and sear the chicken for 1-2 minutes on each side until golden brown.
  6. In a bowl, mix maple syrup with creamy and whole grain Dijon mustards; brush the glaze over the chicken.
  7. Transfer to the prepared baking sheet and bake for 20-25 minutes or until cooked through.
