  • 5 oz arugula
  • 1/4 cup thinly sliced red onion
  • 1/2 cup chopped figs
  • 1/2 cup goat cheese crumbles
  • 1 cup pecan halves
  • 2 Tbsp maple syrup (for glaze)
  • 2 tsp maple syrup (for dressing)
  • 1/2 cup olive oil
  • 1 tsp lemon juice
  • 1 1/2 tsp Dijon mustard
  • 1/2 tsp pepper
  • 1 garlic clove (minced)
  • 3 Tbsp balsamic vinegar
  • 1/41/2 tsp sea salt (or to taste)

Instructions

  1. Preheat oven to 350°F.
  2. Toss pecans with maple syrup and sea salt; spread on parchment-lined baking sheet. Bake for 5-7 minutes until toasted.
  3. Whisk together olive oil, balsamic vinegar, lemon juice, Dijon mustard, minced garlic, pepper, and additional maple syrup in a bowl.
