  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup lightly packed brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream (or Greek yogurt)
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F and prepare a 9” square baking dish by lining it with parchment paper.
  2. In a large sauté pan, boil 1½ cups of fresh apple cider until reduced by half (about 5 minutes). Add diced cold butter until melted.
  3. In a medium bowl, whisk together eggs, both sugars, olive oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt.
  4. Gradually mix in the reduced cider mixture until fully blended.
  5. Gently fold in 1¾ cups of all-purpose flour until just combined.
  6. Pour batter into the prepared baking dish and bake for 22–25 minutes until golden brown.
  7. Allow to cool slightly before brushing melted butter on top and sprinkling with cinnamon sugar.
