  • 1/8 tsp ground cloves
  • 2/3 cup vegetable oil
  • 2 large eggs, room temperature
  • 3/4 cup brown sugar, packed (light or dark)
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream, room temperature
  • 1 tsp pure vanilla extract
  • 23 large honey crispy apples, grated (~1 1/2 cups; can keep the skin on)
  • 1/4 cup salted butter for icing
  • 1/2 cup dark brown sugar, packed for icing
  • 2 Tbsp heavy cream for icing
  • 1/2 tsp pure vanilla extract for icing
  • 1 cup powdered sugar, sifted for icing

Instructions

  1. Preheat your oven to 350°F and line a 9×9-inch nonstick pan with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, salt, and spices.
  3. In another bowl, mix vegetable oil, eggs, both sugars, sour cream, and vanilla until well combined.
  4. Pour the wet ingredients into the dry ingredients, folding gently until just combined.
  5. Fold in grated apples evenly throughout the batter.
  6. Transfer the batter to the prepared pan and bake for 35–40 minutes or until a toothpick comes out clean.
  7. For icing, melt butter with dark brown sugar and heavy cream in a saucepan over medium heat; bring to a gentle boil.
  8. Remove from heat and whisk in vanilla extract and powdered sugar until smooth.
  9. Pour warm icing over the cooled cake before slicing.
