  • Salt and freshly ground black pepper
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 carrots, chopped
  • 3 stalks celery, chopped
  • 4 cloves garlic, minced
  • 1 cup apple vinegar
  • 2 cups beef or lamb broth
  • 2 tbsp tomato paste
  • Fresh rosemary and thyme sprigs
  • 2 bay leaves

Instructions

  1. 1. Season lamb shanks with salt and pepper. In a heavy-bottomed pot, heat olive oil over medium-high heat; sear lamb on all sides until browned. Remove and set aside.
