  • 4 ancho chilies
  • 3 chile de arbol
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons flour
  • 1 tablespoon neutral oil
  • 1 yellow onion, chopped
  • 3 garlic cloves
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon dried Mexican oregano
  • 2 1/2 cups beef broth
  • 2 fresh bay leaves
  • Corn tortillas, warmed
  • White onion, diced
  • Cilantro, chopped
  • Radishes, sliced
  • Lime wedges

Instructions

  1. Toast the dried chilies in a dry skillet over medium heat until fragrant (about 2-3 minutes).
  2. Combine toasted chilies with chopped onion and garlic in a saucepan; cover with water and simmer for 10 minutes until softened.
  3. Transfer softened ingredients to a blender with some soaking liquid, cumin, coriander, oregano, and beef broth. Blend until smooth.
  4. Cut beef chuck into cubes; season with salt, pepper, and flour. Sear in a Dutch oven in hot oil until browned.
  5. Return seared beef to the pot; pour enough sauce over to cover, add bay leaves, cover with lid, and simmer on low for about 2 hours until tender.
  6. Skim excess oil before serving hot with warm tortillas and desired toppings.
