  • 1 pound Italian sausage (chicken or turkey)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 6 cups chicken broth
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (9-ounce) package cheese tortellini
  • 2 cups fresh spinach leaves
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add the Italian sausage and cook until browned, breaking it apart with a wooden spoon.
  2. Remove the sausage from the pot and set aside. In the same pot, sauté onion, carrot, and celery until tender (about 5 minutes). Add garlic and seasonings; cook until fragrant.
  3. Stir in the chicken broth and diced tomatoes; return the sausage to the pot. Bring to a boil then reduce heat to simmer for 20 minutes.
  4. Add tortellini according to package instructions (approximately 7-9 minutes) until tender.
  5. Stir in spinach leaves until wilted; season with salt and pepper before serving.
