  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish (optional)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 cup cherry tomatoes, halved

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
  2. Season the chicken breasts with salt and pepper.
  3. In a bowl, whisk together balsamic vinegar, honey, garlic, dried basil, and oregano.
  4. Heat olive oil in a skillet over medium-high heat and sear the chicken for about 2-3 minutes on each side until golden brown.
  5. Place the seared chicken in the baking dish, pour the balsamic sauce over it, and add halved cherry tomatoes.
  6. Bake for 20-25 minutes until nearly cooked through.
  7. Sprinkle mozzarella cheese on top and return to the oven for an additional 5-10 minutes until melted and bubbly.
  8. Garnish with fresh basil if desired and serve warm.
