  • 1 pound beef tenderloin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • ½ onion, minced
  • 2 cups button mushrooms, finely chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon dried oregano
  • ½ cup pitted black olives
  • 1 pound puff pastry
  • Mustard (to taste)
  • 1 egg, beaten

Instructions

  1. Cut beef into 1-inch pieces and season with salt and pepper.
  2. Heat olive oil in a skillet over high heat; brown the beef on all sides for about 1-2 minutes each batch. Set aside.
  3. In the same skillet, sauté minced onion and chopped mushrooms over medium-low heat for approximately 10 minutes until soft. Stir in soy sauce and oregano.
  4. Transfer the mixture to a food processor, add olives, and blend until smooth.
  5. Roll out puff pastry and cut into squares. Place mustard and a spoonful of the mushroom mixture on each square, topping it with a piece of beef.
  6. Fold corners of pastry over the filling and seal tightly.
  7. Brush with beaten egg, place on a baking tray lined with parchment paper, and bake at 400°F for 10-15 minutes until golden brown.
