  • 4 yellow onions
  • 2 tablespoons olive oil
  • 4 tablespoons salted butter (or non-dairy butter)
  • 3/4 cup half & half (or full-fat coconut milk)
  • 1 cup parmesan cheese (freshly grated)
  • Fresh herbs (chives, thyme, sage)

Instructions

  2. Boil chopped Yukon Gold potatoes in salted water for about 20 minutes until fork-tender.
  3. Drain potatoes and mash with butter, half & half (or coconut milk), and salt until smooth.
  4. Stir in half of the caramelized onions and parmesan cheese until well combined.
  5. Serve topped with remaining onions and freshly chopped herbs.
