  • 300g dark chocolate (for frosting)
  • 3 tbsp corn syrup
  • 8 oz cream cheese, room temperature
  • 1/3 cup cocoa powder (for frosting)
  • 1 cup powdered sugar
  • 1/4 tsp salt
  • 1 1/4 cup heavy cream, chilled

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round baking pans.
  2. In a bowl, sift together flour, baking powder, baking soda, cocoa powder, sugars, and salt.
  3. In another bowl, beat eggs and add vegetable oil, buttermilk mixture, sour cream, and instant coffee until combined.
  4. Gradually mix wet ingredients into dry ingredients until just combined. Then add boiling water carefully to loosen the batter.
  5. Divide the batter between the prepared pans and bake for about 30 minutes or until a toothpick comes out clean.
  6. Allow cakes to cool completely before frosting with melted dark chocolate mixed with cream cheese and whipped heavy cream.
