  • 3 cups water
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • 2 cans (15 oz each) cannellini beans, drained
  • 1 cup ditalini pasta
  • 2 cups chopped kale
  • 1/4 cup chopped parsley
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion, carrots, and celery until softened, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.
  2. Pour in crushed tomatoes, vegetable broth, water, bay leaves, oregano, and red pepper flakes. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  3. Stir in drained cannellini beans and ditalini pasta; simmer until pasta is al dente, about 8-10 minutes.
  4. Add chopped kale to the soup and cook until wilted, about 5 minutes.
  5. Remove bay leaves; stir in parsley and lemon juice. Season with salt and pepper to taste.
