  • 32 oz full-fat cream cheese
  • 1 cup granulated sugar (for cheesecake)
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1/2 cup sour cream
  • 1 cup granulated sugar (for caramel)
  • 5 tbsp unsalted butter (for caramel)
  • 1 tsp salt (for caramel)
  • 2 tsp vanilla extract
  • 1 tbsp cornstarch
  • Optional: Flaky sea salt for garnish

Instructions

  1. Prepare the salted caramel sauce by melting sugar until amber, stirring in butter, then adding warm heavy cream and salt. Let cool.
  2. Preheat the oven to 350°F (175°C). Crush Biscoff cookies and mix with melted butter. Press into a springform pan.
  3. Beat room temperature cream cheese until smooth; add sugar, vanilla, eggs one at a time, then mix in sour cream, heavy cream, cornstarch, and cooled caramel.
