  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 8 oz cream cheese
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F and line your muffin pan with paper baking cups.
  2. In a medium bowl, whisk together the flour, pumpkin spice, baking soda, and salt; set aside.
  3. In a large bowl, mix pumpkin puree with granulated sugar and brown sugar. Beat in eggs, vegetable oil, and vanilla until smooth. Gradually add the dry ingredients until just combined.
  4. In another bowl, beat cream cheese with sugar, egg yolk, and vanilla until smooth.
  5. Fill each muffin cup about 3/4 full with pumpkin batter. Add about 1 tablespoon of cream cheese mixture on top and swirl gently with a toothpick.
