  • ¾ cup all-purpose flour (or gluten-free flour blend)
  • ⅓ cup light brown sugar
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 6 tbsp unsalted butter (or coconut oil), melted
  • 1 tsp vanilla extract
  • 1 cup blueberries (fresh or frozen)
  • ¼ cup granulated sugar
  • 2 tsp cornstarch

Instructions

  1. Preheat the oven to 375°F (190°C) and line an 8-inch square baking pan with parchment paper.
  2. In a large bowl, mix the oats, flour, brown sugar, baking soda, salt, and optional cinnamon until combined.
  3. Stir in the melted butter and vanilla extract until crumbly.
  4. Press half of the oat mixture into the prepared pan as a base layer.
  5. In another bowl, combine blueberries with granulated sugar and cornstarch; spread over the base layer.
  6. Crumble the remaining oat mixture on top and gently press down.
  7. Bake for 35-40 minutes until golden brown and bubbly around edges.
  8. Cool completely before lifting out and cutting into squares.
