  • Salt & black pepper to taste

  1. Boil the Eggs: Place eggs in boiling water for 9-10 minutes until firm. Transfer to an ice bath to stop cooking, then peel and halve.
  2. Sauté the Vegetables: In a skillet, heat olive oil over medium heat. Add cherry tomatoes and sauté for 2-3 minutes until softened. Stir in spinach and cook until just wilted (about 1-2 minutes). Season with salt and black pepper.
  3. Plate & Serve: Arrange the sautéed vegetables alongside the halved boiled eggs on a plate. Sprinkle with black pepper and garnish with chili flakes or pink peppercorns if desired.
