  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 medium onion (chopped)
  • 3/4 cup chicken broth
  • 1 (5.2 oz) package Boursin Fine Herbs & Garlic cheese (softened)
  • Salt and pepper to taste

Instructions

  1. Cut chicken breasts in half lengthwise; season with garlic powder, salt, and pepper.
  2. In a skillet over medium-high heat, add olive oil and butter. Cook chicken for 5-6 minutes per side until fully cooked. Remove from skillet.
  3. Sauté chopped onions in the same skillet for about 5 minutes until softened.
  4. Pour in chicken broth and add softened Boursin cheese; stir until smooth and simmer for 5 minutes.
  5. Return chicken to skillet, warming through for a couple of minutes. Adjust sauce thickness if needed by adding more broth.
  6. Season to taste with salt and pepper before serving.
