  • 3/4 cup chopped broccoli stems
  • 2 cups finely chopped broccoli florets
  • 1 cup chopped leek
  • 4 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 12 cups water
  • 1 tbsp mustard powder
  • Salt to taste
  • Pepper to taste
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 cup dried orzo
  • 8 oz sharp cheddar cheese, grated
  • 57 slices turkey

Instructions

  1. Preheat the oven to 400°F (200°C) to crisp the turkey.
  2. In a large pot, heat olive oil and butter over medium heat. Sauté leeks, broccoli stems, and potatoes for about 3 minutes. Add garlic, salt, pepper, and mustard powder; stir for an additional minute.
  3. Pour in the broth and water (1-2 cups depending on desired thickness). Bring to a simmer for about 10 minutes until vegetables are tender.
  4. On a baking sheet, arrange turkey slices and bake for 10-12 minutes until crispy.
  5. Blend the soup until smooth then return it to the pot. Stir in orzo and cook for around 9-10 minutes until tender.
  6. Finally, mix in cheddar cheese until melted. Serve topped with crispy turkey slices.
