  • 1 cup (125 g) all-purpose flour, spooned and leveled
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2/3 cup semi-sweet chocolate chips
  • 2 3/4 cups (345 g) all-purpose flour
  • 1 teaspoon cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (226 g) unsalted butter, cold and cubed
  • 3/4 cup (150 g) light brown sugar, packed
  • 2/3 cup (130 g) granulated sugar
  • 1 egg, plus 1 egg yolk, room temperature
  • 2 teaspoons vanilla
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
  2. In a stand mixer bowl, combine the room temperature butter and brown sugar. Beat for about 3 minutes until light and fluffy.
  3. Add in the egg and vanilla; mix until well combined.
  4. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt. Sift this mixture into the wet ingredients. Mix on low speed until just combined.
  5. Gently fold in the semi-sweet chocolate chips using a spatula. Set aside.
  6. In a clean stand mixer bowl, add cold butter cubes along with both sugars. Start mixing on low speed before gradually increasing for about 4 minutes until pale and fluffy.
  7. Beat in one egg at a time along with the egg yolk while scraping down the sides of the bowl as needed.
  8. Mix in vanilla extract until fully incorporated.
  9. In another bowl, whisk together flour, cornstarch, baking soda, and salt before adding it to the wet mixture in two batches. Mix on low speed until just combined; do not overmix.
  10. Fold in more chocolate chips gently with a spatula.
  11. Use a small cookie scoop to portion out dough balls from each type of dough—make chocolate chip cookie dough balls slightly larger than brownie ones.
  12. Roll each type into uniform balls using your hands for consistency.
  13. Combine one brownie cookie ball with one chocolate chip cookie ball; press them together lightly before rolling into one seamless ball.
  14. Place them on prepared baking sheets about 2 inches apart.
  15. Bake each tray in the center of your oven for about 8 to 9 minutes or until edges are set but tops remain slightly underbaked to ensure gooeyness.
  16. Once baked, remove from oven and let cool on sheets for about 5 to 10 minutes before transferring to wire racks to cool completely.
