  • 2 tsp ground cinnamon
  • 1/4 cup brown sugar for filling
  • 1 tsp ground cinnamon for filling
  • 1 tbsp melted butter for filling
  • 1 cup powdered sugar for glaze
  • 2 tbsp milk for glaze
  • 1/2 tsp vanilla extract for glaze
  • Pinch of cinnamon for glaze

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy. Beat in eggs and vanilla.
  3. In another bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon. Gradually mix dry ingredients into the wet mixture until combined. Chill dough for about 20 minutes.
  4. Prepare the filling by mixing brown sugar, cinnamon, and melted butter in a small bowl.
  5. For each cookie, scoop about 2 tablespoons of dough, flatten slightly, add filling in the center, cover with another piece of dough, seal edges tightly, and roll into a ball.
  6. Place shaped cookies on prepared baking sheets with space between them. Bake for 10–12 minutes until edges are golden but centers remain soft. Cool on wire racks.
  7. To make the glaze, whisk powdered sugar with milk and vanilla until smooth; drizzle over cooled cookies.
