  • 1.5 lbs boneless chicken thighs or breasts, cubed
  • 1/2 cup plain yogurt
  • 1 tbsp lemon juice
  • 45 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tsp garam masala, divided
  • 1 tsp chili powder
  • 1/2 tsp turmeric
  • 2 tbsp butter, plus more as needed
  • 1 cup tomato puree
  • 1/2 cup heavy cream
  • 1 tsp salt, adjust to taste
  • 1 tsp sugar, optional
  • 1/4 cup chopped fresh cilantro, for garnish
  • 1 lb frozen or homemade French fries
  • 4 garlic naan, store-bought or homemade
  • 1 tbsp olive oil, for cooking or brushing naan

Instructions

  1. Marinate chicken in yogurt, lemon juice, half of the minced garlic and ginger, and spices for at least 30 minutes.
  2. In a large skillet, melt butter over medium heat. Add marinated chicken and cook until browned. Remove from skillet.
  3. In the same skillet, add remaining butter, garlic, and ginger; sauté until fragrant. Stir in tomato puree and spices; simmer for about 10 minutes.
  4. Reduce heat; stir in heavy cream and return chicken to skillet. Simmer until sauce thickens (10–15 minutes).
  5. Prepare fries as per package instructions or fry homemade ones until golden brown.
  6. Warm naan in a skillet or oven; optionally brush with olive oil mixed with garlic.
  7. Serve butter chicken alongside fries and naan, garnished with cilantro.
