  • 1 1/2 cups dry Calrose Sushi Rice
  • 2 cups water
  • 1/4 cup seasoned rice vinegar
  • 1/4 cup Japanese mayonnaise
  • 2 teaspoons sriracha
  • 8 oz imitation crab chopped into small pieces
  • 1/2 cup diced English cucumber
  • 12 nori sheets chopped or crumbled into small pieces
  • 1 large avocado peeled and sliced
  • Black and toasted sesame seeds for garnish
  • 1/4 cup low-sodium soy sauce for serving
  • Nori Furikake

Instructions

  1. Rinse 1 1/2 cups of sushi rice in a mesh sifter. Add it to a rice cooker with 2 cups of water and cook until done.
  2. Once cooked, transfer the rice to a rimmed baking sheet. Gently mix in 1/4 cup seasoned rice vinegar using a rice paddle and allow to cool completely.
  3. In a small bowl, combine 1/4 cup Japanese mayonnaise with 2 teaspoons sriracha until smooth.
  4. Chop 8 ounces of imitation crab and dice 1/2 cup of English cucumber.
  5. In a mixing bowl, layer cooled sushi rice, chopped crab, diced cucumber, and sliced avocado. Drizzle with spicy mayo and sprinkle with nori pieces, sesame seeds, and furikake.
