Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts
  • 12 oz rotini pasta
  • 4 tbsp unsalted butter
  • 4 cloves garlic
  • 1 cup all-purpose flour
  • 3 cups whole milk
  • 8 oz Velveeta cheese
  • 4 oz cream cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Cook rotini in salted boiling water until al dente (about 9-10 minutes). Reserve 1 cup of pasta water, then drain.
  2. Season chicken with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper. Sauté in olive oil over medium-high heat until golden brown (6-8 minutes). Set aside.
  3. In the same skillet, melt butter and sauté minced garlic for 1 minute. Whisk in flour to create a roux for about 2 minutes.
  4. Gradually add milk while whisking; simmer until thickened (3-5 minutes). Stir in Velveeta, cream cheese, mozzarella, and Parmesan until melted and smooth.
  5. Combine cooked rotini and chicken with the sauce; adjust consistency with reserved pasta water if needed.
