  • 1 can (12 oz) evaporated milk
  • 1 quart chicken stock (plus extra if using raw chicken)
  • 4 cups shredded cooked chicken (or raw skinless breasts/thighs)
  • Fresh thyme
  • 2 cups all-purpose flour
  • 1 tablespoon plus 1 teaspoon baking powder
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon salt
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme, optional)
  • 3/4 cup whole milk
  • 4 tablespoons butter (melted)

Instructions

  1. In a large Dutch oven, melt butter over medium-high heat. Add onion, carrots, and celery; cook for 5 minutes until softened. Stir in garlic and cook for an additional minute.
  2. Sprinkle flour over vegetables and stir for one minute. Gradually add evaporated milk and chicken stock while stirring to prevent lumps.
  3. If using raw chicken, add it now with an extra cup of broth. Simmer for 20 minutes until cooked through; shred chicken and return it to the pot. If using pre-cooked chicken, bring to boil before adding it along with thyme and pepper.
  4. For dumplings: Mix flour, baking powder, salt, thyme, whole milk, and melted butter in a separate bowl until just combined.
  5. Drop spoonfuls of dumpling batter into the simmering soup. Cover tightly and cook for about 15 minutes without lifting the lid.
