Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 8 oz egg noodles (or preferred pasta)
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • ½ cup heavy cream
  • Olive oil, salt, black pepper, dried thyme, and parsley for seasoning

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt, pepper, and thyme.
  2. Sear chicken for 5-6 minutes per side until golden brown and cooked through. Remove from skillet and slice.
  3. Boil salted water in a pot; cook noodles until al dente then drain, reserving some cooking water.
  4. In the same skillet, melt butter over medium heat, scraping up any browned bits.
  5. Sauté minced garlic for about 1 minute.
  6. Add chicken broth; simmer for 3-4 minutes. Stir in heavy cream and let thicken for another few minutes.
  7. Toss in drained noodles; add reserved pasta water if needed for desired consistency.
  8. Return sliced chicken to skillet; mix well to coat everything in the sauce.
  9. Adjust seasoning; garnish with parsley before serving.
