  • 4 strips Turkey Bacon, chopped
  • 1 small yellow onion, diced
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 1/4 cup all-purpose flour
  • 3 cups chicken broth
  • 2 cups diced Yukon Gold potatoes
  • 1/2 tsp dried thyme
  • 1/2 tsp dried parsley
  • Salt and pepper, to taste
  • 1 1/2 cups cooked shredded chicken
  • 1 1/2 cups corn, fresh, frozen, or canned
  • 1 cup half & half
  • 1/3 cup sour cream

Instructions

  1. In a large pot, cook chopped turkey bacon over medium heat until crispy. Remove and set aside, keeping the fat in the pot.
  2. Sauté diced onion, chopped celery, and minced garlic in the pot until soft.
  3. Stir in flour and cook for 1 minute.
  4. Gradually add warm chicken broth while stirring to avoid lumps; bring to a gentle simmer.
  5. Add diced potatoes, thyme, and parsley; simmer until potatoes are tender (10–15 minutes).
  6. Stir in shredded chicken and corn; cook for an additional 5–7 minutes.
  7. Reduce heat to low, mix in half & half and sour cream; avoid boiling.
