  • 1 cup sliced mushrooms
  • 1 cup sliced carrots
  • 1 cup sliced green bell pepper
  • 2 garlic cloves
  • 1 tbsp soy sauce
  • 1 tsp cornstarch
  • 1 tsp sesame oil
  • 1 tbsp vegetable oil
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 cup chicken stock
  • Salt & pepper to taste
  • 1 cup cooked white rice
  • Fresh cilantro, chopped

Instructions

  1. Marinate chicken strips in soy sauce, cornstarch, and sesame oil for 10 minutes.
  2. Mix together sauce ingredients: soy sauce, rice vinegar, honey, and chicken stock.
  3. Heat vegetable oil in a wok; stir-fry marinated chicken until browned (5-7 minutes). Set aside.
  4. Stir-fry minced garlic for 30 seconds; add carrots, mushrooms, and bell pepper until tender-crisp (3-4 minutes).
  5. Return chicken to the wok; pour in the prepared sauce and stir until well coated and heated through (2-3 minutes).
  6. Serve over cooked rice and garnish with chopped cilantro.
