Instructions

  2. Whisk together flour, cornstarch, baking soda, and sea salt in a small bowl; set aside.
  3. In a stand mixer, beat the cooled butter with both sugars until sandy in texture (about 4-5 minutes).
  4. Add egg, egg yolk, and vanilla extract; mix until smooth (2-3 minutes).
  5. Gradually incorporate dry ingredients until just combined; avoid overmixing.
  6. Chill dough for at least one hour (up to 72 hours for better flavor).
  7. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  8. Shape chilled dough into balls and place on prepared sheets about 2 inches apart.
  9. Bake for 8-10 minutes until edges are golden brown.
  10. Allow cookies to cool on the baking sheet for 1-2 minutes before transferring to a wire rack.
