  • 2 cups white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 2 ounces chocolate almond bark
  • 1 ½ cups white chocolate chips
  • ½ can sweetened condensed milk (7 oz)
  • ½ teaspoon mint extract
  • Green food coloring

Instructions

  1. Preheat your oven to 350°F (175°C). In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  2. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  3. Gradually add cocoa powder, salt, baking soda, baking powder, and flour; mix until combined.
  4. Roll dough into 1-inch balls and place on a greased or parchment-lined baking sheet. Use your thumb to create an indent in each ball.
  5. Bake for about 12 minutes. If thumbprints flatten out during baking, press down again after removing from the oven.
  6. Cool on the sheet for two minutes before transferring to a wire rack.
  7. For the fudge filling, melt white chocolate chips and sweetened condensed milk in a saucepan over medium heat while stirring continuously.
  8. Stir in mint extract and spoon this mixture into the cooled cookie centers.
  9. Melt chocolate almond bark and drizzle over each cookie. Let set before serving.
