  • 2 large handfuls baby spinach
  • 3 tablespoons milk (almond or regular)
  • 1 egg
  • ½ cup sugar
  • 1 teaspoon vanilla extract
  • ½ cup Greek yogurt
  • 3 tablespoons oil
  • 1 cup white whole wheat flour
  • 1 teaspoon baking soda
  • â…” cup cocoa powder
  • ¼ teaspoon sea salt
  • ½ cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a high-powered blender, combine milk, bananas, and spinach. Blend until mostly smooth; a few lumps are fine.
  3. Transfer the mixture to a large mixing bowl and add one egg, sugar, vanilla, oil, and Greek yogurt; mix well.
  4. In a separate bowl, combine white whole wheat flour, baking soda, sea salt, and cocoa powder. Gradually add to the wet mixture while folding gently.
  5. Stir in dark chocolate chips, reserving some for topping if desired.
  6. Line a muffin pan with liners and evenly distribute the batter into each cup. Sprinkle extra chocolate chips on top.
  7. Bake for about 18-22 minutes or until a toothpick inserted comes out clean.
  8. Allow cooling for several minutes before transferring to a wire rack.
