  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 tablespoons melted butter
  • 1/4 cup sugar
  • 1 tablespoon ground cinnamon
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan with parchment paper or grease lightly.
  2. In a large bowl, mix flour, baking soda, baking powder, and salt.
  3. In another bowl, beat together sugar, eggs, vegetable oil, vanilla extract, and grated zucchini until well blended.
  4. Gradually combine the dry mixture with the wet ingredients without overmixing.
  5. Prepare the cinnamon filling by mixing melted butter, sugar, and ground cinnamon in a small bowl.
  6. Pour half of the batter into the loaf pan; drizzle with half of the cinnamon filling and swirl gently with a knife. Repeat with remaining batter and filling.
  7. Bake for 45-55 minutes until a toothpick comes out clean. Cover loosely with foil if needed to prevent over-browning.
  8. Allow cooling for about 10 minutes before transferring to a wire rack; drizzle with glaze made from whisking powdered sugar and milk together.
