  • 2 diced carrots
  • 2 diced celery stalks
  • 1 diced medium onion
  • 4 oz chopped turkey strips
  • 1 can cannellini beans
  • 1 can whole plum tomatoes (28 oz)
  • 4 cups chicken broth
  • 3/4 cups ditalini pasta
  • A handful of fresh basil
  • 1 tbsp oregano
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 1 bag spinach, chopped
  • 1 parmesan rind
  • 2 tbsp olive oil

Instructions

  1. In a large pot, sauté the chopped turkey strips over medium heat until crispy (about 8 minutes). Add olive oil, carrots, celery, and onion; cook for another 10 minutes until softened.
  2. Create a well in the center of the vegetables and add tomato paste. Allow it to caramelize for 3 minutes before mixing with the vegetables.
  3. Stir in crushed tomatoes, basil, bay leaves, and seasonings. Bring to a simmer.
  4. Add chicken broth and parmesan rind; bring to a boil then reduce heat to simmer for about 15 minutes.
  5. Incorporate cannellini beans and ditalini pasta; simmer for an additional 15 minutes until pasta is tender.
  6. Finally, stir in chopped spinach and let it wilt for 3 minutes before serving.
