  • 1.5 lbs beef sirloin or flank steak, thinly sliced
  • 2 tbsp vegetable oil
  • 1 medium yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 (13.5 oz) can coconut milk
  • 1/2 cup beef broth
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar

Instructions

  1. Prepare all ingredients by slicing the beef, chopping the onion, mincing the garlic, and grating the ginger.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add sliced beef and cook until browned (about 5-7 minutes). Remove from skillet and set aside.
  3. In the same skillet, sauté onions for 3-4 minutes until soft. Add garlic and ginger; cook for another minute until fragrant.
  4. Stir in red curry paste, ground cumin, turmeric, and chili flakes if desired. Cook for about 2 minutes to toast the spices.
  5. Pour in coconut milk and beef broth; mix well. Return cooked beef to the skillet along with soy sauce and brown sugar. Simmer on low for about 10 minutes to meld flavors.
  6. Serve hot alongside garlic naan and jasmine rice.
