  • 2.5 lbs beef chuck or stew meat, cut into large chunks
  • 2 Tbsp coconut oil (or vegetable oil)
  • 1 large onion, finely sliced
  • 4 garlic cloves, minced
  • 1 Tbsp fresh ginger, grated
  • 2 Tbsp red curry paste (or curry powder)
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 tsp ground cinnamon
  • 1 tsp chili flakes (optional, for heat)
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth
  • 1 Tbsp tomato paste
  • 2 Tbsp brown sugar or honey

Instructions

  1. Heat coconut oil in a large pot over medium heat. Brown the beef chunks on all sides, then remove them from the pot.
  2. Sauté sliced onions, minced garlic, and grated ginger in the same pot until soft.
  3. Stir in red curry paste and spices; cook for about 2 minutes to release flavors.
  4. Return beef to the pot with coconut milk, beef broth, tomato paste, and brown sugar or honey; stir to combine.
  5. Bring to a gentle boil, reduce heat to low, cover, and simmer for about 2 hours until tender.
  6. Serve over jasmine rice or with your preferred side.
