  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • Coconut milk (additional liquid as desired)

Instructions

  1. Prepare all ingredients before cooking for a smoother process.
  2. Season beef cubes with salt and pepper in a bowl.
  3. Heat vegetable oil in a large pot over medium-high heat. Add seasoned beef cubes and brown on all sides (5-7 minutes). Remove and set aside.

  5. Return seared beef to the pot, combine well, and add coconut milk or broth if desired.
  6. Cover the pot, reduce heat to low, and simmer for about 45 minutes or until beef is tender.
