  • 2 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup unsalted butter (melted and cooled)
  • 1 cup light brown sugar (packed)
  • ½ cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 2 large eggs (room temperature)
  • 1 ½ cups semi-sweet chocolate chips

Instructions

  1. Blend instant coffee into a fine powder using a food processor. In a medium bowl, sift together flour, baking soda, baking powder, salt, ground cinnamon, and blended coffee.
  2. In a large bowl, mix melted butter, brown sugar, granulated sugar, vanilla extract, and eggs until well combined.
  3. Gradually add the dry mixture to the wet ingredients using a rubber spatula until just combined. Fold in chocolate chips.
  4. Preheat the oven to 350°F (175°C) and line two cookie sheets with parchment paper.
  5. Scoop dough onto prepared sheets and bake one sheet at a time for 12-14 minutes until edges are golden but centers are slightly underbaked.
  6. Cool on pan for five minutes before transferring to a cooling rack.
