  • 3 lb boneless chuck roast
  • 3 lbs yellow onions
  • 2 cloves garlic
  • 1 cup red apple vinegar or extra beef stock
  • 2 ½ cups beef stock
  • 1 tbsp maple syrup or brown sugar
  • 1 tbsp extra virgin olive oil
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp fine sea salt
  • 1/2 tsp freshly ground black pepper
  • 1 tbsp all-purpose flour or gluten-free all-purpose flour
  • 1 sprig rosemary
  • 1 bay leaf

Instructions

  1. Season the chuck roast with salt and pepper. Sear in a heavy-duty skillet with olive oil until browned on all sides.
  2. In the same skillet, add more olive oil and sauté sliced onions and garlic until caramelized. Stir in maple syrup or brown sugar and flour.
  3. Transfer the onion mixture to a Dutch oven, place the seared roast on top, and add red apple vinegar (or extra beef stock), beef stock, rosemary, and bay leaf.
  4. Cover and cook in a preheated oven at 325°F for about 195 minutes or until the meat is tender.
  5. Let rest for 10 minutes before slicing and serving hot.
