  • 2 stalks celery, diced
  • 1 15-ounce can kidney beans, drained and rinsed
  • 1 15-ounce can cannellini beans, drained and rinsed
  • 1 15-ounce can diced tomatoes, with juice
  • 4 cups beef broth
  • 1 cup small shell pasta (or ditalini)
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1 bunch fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the ground beef and cook until browned. Use a wooden spoon to break it up as it cooks. Drain excess grease if necessary.
  2. Add the diced onion, minced garlic, diced carrots, and diced celery to the pot. Sauté for about 5–7 minutes until the vegetables are tender.
  3. Stir in the Italian seasoning, salt, and black pepper. Cook for another minute to release those delicious flavors.
  4. Add in the kidney beans, cannellini beans, diced tomatoes (with their juice), and beef broth. Bring this mixture to a boil.
  5. Reduce heat and let it simmer for about 20–25 minutes. This allows all those wonderful flavors to meld together beautifully.
  6. In the last 10 minutes of cooking, add the small shell pasta to the pot. Cook until al dente according to package instructions.
