  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 2 medium carrots, diced
  • 1 large onion, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 15 oz can diced tomatoes
  • 15 oz can tomato sauce
  • 4 cups chicken broth
  • 15 oz can Great Northern beans, rinsed and drained
  • 15 oz can Kidney beans, rinsed and drained
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup ditalini pasta
  • 2 tablespoon fresh basil, chopped

Instructions

  1. In a Dutch oven, heat olive oil over medium heat. Add ground beef and cook until browned, about 3 to 5 minutes. Drain excess fat.
  2. Sauté diced carrots, onion, celery, and minced garlic in the same pot for 3 to 4 minutes until the onion is translucent.
  3. Return beef to the pot and stir in diced tomatoes, tomato sauce, beans, and chicken broth. Simmer for 10 minutes.
  4. Add ditalini pasta, Italian seasoning, salt, and pepper. Simmer again for 10 minutes until pasta is tender.
  5. Stir in chopped fresh basil before serving.
