  • ¼ cup natural peanut butter
  • 2 tbsp sweetener (maple syrup or sugar-free alternative)
  • 1 tsp vanilla extract
  • ¼ tsp salt (optional)
  • 12 tbsp milk or heavy cream (if needed)
  • 2 oz dark chocolate chips
  • 1 tsp coconut oil
  • Chopped peanuts (for garnish)

Instructions

  1. In a high-speed blender or food processor, blend the cottage cheese, peanut butter, sweetener, vanilla extract, and salt until smooth.
  2. If needed, adjust consistency by adding 1-2 tablespoons of milk and blend again.
  3. Transfer the mousse to a bowl and chill in the refrigerator for 15–20 minutes.
  4. Melt dark chocolate chips and coconut oil in a microwave-safe bowl until smooth.
