  • 2 pounds ground beef
  • 1 cup canned pinto beans (drained and rinsed)
  • 1 cup BBQ sauce (divided)
  • 1 cup sharp cheddar cheese (shredded)
  • ½ cup plain breadcrumbs
  • 2 large eggs (beaten)
  • 1 tablespoon vegetable oil
  • 1 small yellow onion (finely diced)
  • 1 green bell pepper (finely diced)
  • 1 teaspoon garlic (minced)
  • 2 teaspoons chili powder
  • 2 teaspoons kosher salt
  • ½ teaspoon cayenne
  • ½ teaspoon black pepper

Instructions

  1. Preheat oven to 350°F and prepare a large loaf pan with nonstick spray.
  2. In a skillet, sauté diced onion and green bell pepper in vegetable oil until softened; add minced garlic and remove from heat to cool.
  3. In a mixing bowl, combine cooled vegetables with ground beef, pinto beans, breadcrumbs, half of the BBQ sauce, eggs, and seasonings; mix gently.
  4. Shape half of the mixture into a flat loaf in the prepared pan; create a trench and fill it with shredded cheese.
  5. Top with remaining meat mixture; seal edges and shape into an even loaf.
  6. Brush with remaining BBQ sauce and bake for 40 minutes.
  7. Brush again with BBQ sauce and bake for an additional 25-30 minutes until internal temperature reaches 160°F.
  8. Let rest for 5 minutes before slicing.
