  • 1 can diced tomatoes (14.5 oz, undrained)
  • 4 cups vegetable or chicken broth
  • 1 sprig fresh rosemary
  • 2 tablespoons fresh parsley (chopped)
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Prepare your ingredients by finely chopping the onions, carrots, celery, and mincing the garlic. Rinse and drain the cannellini beans.
  2. In a large pot over medium heat, add olive oil and sauté the onions, carrots, celery, and garlic for about 5–7 minutes until softened.
