  • 11 oz. white chocolate, chopped
  • 5 Tablespoons unsalted butter
  • 3 Tablespoons heavy cream
  • Pinch of salt
  • 1 teaspoon orange or vanilla extract (optional)
  • 1/3 cup finely chopped dried cranberries
  • 1/3 cup finely chopped toasted pistachios
  • 1/2 cup powdered sugar

Instructions

  1. In a small saucepan over low-medium heat, melt the butter. Add the heavy cream and stir to combine.
  2. Stir in a pinch of salt and optional extract; set aside.
  3. Over a double boiler, melt the white chocolate until smooth but not exceeding 105°F.
  4. Remove from heat and gently stir in the butter and cream mixture until well combined.
  5. Fold in cranberries and pistachios, then cover and let sit at room temperature for one hour before refrigerating for 2-3 hours until firm.
  6. Scoop out the mixture using a small spoon or melon baller, rolling into one-inch balls.
  7. Roll each truffle in powdered sugar until well coated.
