  • 1 large russet potato (peeled and diced)
  • 3 to 4 cups chicken broth
  • 5 tablespoons butter
  • ¼ cup plus 1 tablespoon all-purpose flour
  • 1½ cups milk
  • ½ cup heavy cream
  • Optional: frozen or canned corn and peas

Instructions

  1. Season the chicken with salt and pepper. In a large pot, heat olive oil over medium-high heat and brown the chicken on both sides. Remove and set aside.
  2. In the same pot, sauté garlic, onion, celery, and carrots until softened.
  3. Stir in apple cider vinegar, potatoes, and 3 cups of chicken broth; bring to a simmer.
