  • 2 chicken breasts, cut into 1” pieces
  • ½ tsp garlic powder
  • Salt & pepper, to taste
  • Flour, for dredging
  • 3 tbsp olive oil, divided
  • 1 tbsp butter
  • 8 oz cremini mushrooms, sliced
  • ½ medium onion, chopped
  • 1 tbsp Dijon mustard
  • 3 cloves garlic, minced
  • ⅔ cup chicken broth
  • ½ cup full-fat sour cream

Instructions

  1. Season chicken pieces with garlic powder, salt, pepper, and a light dredge of flour.
  2. Heat 2 tablespoons of olive oil in a skillet over medium heat. Sear half of the chicken until browned on all sides; remove and set aside.
  3. In the same skillet, add butter and remaining olive oil. Sauté sliced mushrooms and chopped onions until soft.
  4. Stir in Dijon mustard and minced garlic; cook until fragrant.
  5. Deglaze the pan with chicken broth, scrape up browned bits, then return seared chicken to the skillet and simmer for a couple of minutes.
  6. Stir in sour cream until heated through but do not boil. Adjust seasoning as needed before serving.
