  • 1 ½ lb chicken breasts
  • 4 carrots, sliced
  • 3 celery stalks, chopped
  • 1 onion, diced
  • 810 cups chicken broth (low sodium recommended)
  • 1 cup uncooked wild rice (rinsed)
  • 4 garlic cloves (minced)
  • ¼ cup flour (gluten-free works too)
  • ½ cup half-and-half
  • ½ cup whole milk
  • 1 bay leaf
  • 1 Tbsp Italian Seasoning
  • 1 tsp thyme
  • 1 tsp parsley
  • ½ tsp sea salt
  • ½ tsp cracked pepper

Instructions

  1. Prepare vegetables by chopping the onion, carrots, celery, and mincing the garlic.
  2. Place chicken at the bottom of the slow cooker and top with garlic, herbs, seasoning, onion, carrots, and celery.
  3. Add chicken broth and wild rice; stir to combine.
  4. Cover and cook on low for 6-8 hours until the rice is tender.
  5. Shred cooked chicken and return to the soup.
  6. Whisk together flour, half-and-half, and whole milk; stir into the soup until combined.
  7. Adjust consistency with more broth if necessary; serve hot.
