  • 500 ml whole milk
  • 200 g sharp cheddar cheese, grated
  • 100 g Gruyère cheese, grated
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 50 g panko breadcrumbs
  • 1 tablespoon unsalted butter, melted
  • 1/4 teaspoon smoked paprika
  • 100 g pomegranate arils
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Preheat oven to 190°C (375°F) and grease a medium baking dish.
  2. Cook elbow macaroni in salted boiling water until al dente; drain and set aside.
  3. In a large saucepan over medium heat, melt butter, then whisk in flour. Gradually add milk while whisking until thickened (about 5 minutes). Stir in cheeses, mustard, garlic powder, salt, and pepper until smooth.
  4. Combine pasta with cheese sauce and pour into prepared baking dish.
  5. Mix panko breadcrumbs with melted butter and sprinkle over the top.
  6. Bake for 20 minutes until golden brown and bubbling.
  7. Let cool slightly before garnishing with pomegranate arils and serving.
