  • 4 cloves garlic, minced
  • 12 oz twisted pasta (like rotini or fusilli)
  • 1 cup Velveeta, cubed
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • Salt and black pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Cook the twisted pasta in salted boiling water until al dente. Drain and set aside.
  2. In a mixing bowl, toss the chicken pieces with Cajun seasoning and garlic powder until well coated.
  3. Heat a large skillet over medium-high heat. Add butter and olive oil. Once melted and hot, add the chicken in a single layer. Sear the chicken for 4-5 minutes per side or until golden-brown, crisp on the edges, and cooked through. Transfer to a plate and keep warm.
  4. In the same skillet, reduce heat to medium and add the minced garlic. Sauté for 1 minute until fragrant.
  5. Pour in the heavy cream and milk, stirring to combine. Let it come to a gentle simmer for about 2-3 minutes. Add in the Velveeta cubes and stir until melted and smooth. Then add mozzarella and Parmesan, stirring constantly until the sauce is thick, cheesy, and creamy.
  6. Season with salt and pepper to taste. Toss in the cooked pasta, stirring well so that every spiral is coated with sauce.
  7. Plate by placing the creamy pasta on one side of each plate and searing chicken on the other side. Let some sauce pool at the base for added flair. Garnish with chopped parsley if desired.
