  • 12 oz turkey sausage links (casings removed)
  • 10 oz potato gnocchi
  • 1 cup heavy cream (or plant-based alternative)
  • 1/3 cup chicken broth
  • 1 cup pumpkin puree
  • 3 cloves garlic (minced)
  • 4 oz fresh spinach
  • 2 tablespoons fresh sage (chopped)
  • 2 tablespoons fresh thyme
  • Salt and coarsely ground black pepper (to taste)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add turkey sausage, cooking until browned (about 6 minutes). Drain excess fat.
  2. Stir in gnocchi, heavy cream, and chicken broth. Bring to a boil, then cover and simmer for 5 minutes.
